When I tried to poke the large end of the egg, at first, I thought I was going to crack the whole thing open. But it does work. Just give the pin a firm push.

"Hi Suzanne, I am a 27-year-old culinary student who started reading your column regularly about a year ago. I have grown to love reading with you. As for the eggs, the freshness of the egg has a lot to do with how easy it is to peel. As the egg 'ages' air permeates into it through the shell creating a pocket between the shelf and the thin membrane surrounding the albumin. Therefore, an older egg is easier to peel after it is boiled. I'm thinking you must be getting fresher eggs than in the past, whether you know it or not. So, my advice is to save half of your dozen for about 5 days before boiling. Use the other half right away--I recommend eggs sunny-side-up- over steamed asparagus with shaved parmesan and cracked black pepper. Yum!"
